Super-easy summer recipes
So as we finally have some good weather, this is a recipe for BBQ chicken wings, corn on the cobs and something sweet to wash it all down with! Perfect as part of a meal in the summer or as a snack for friends and family. So quick and easy to do and I just do both of them on my Weber BBQ (which I highly recommend by the way – I use it everyday!).
Chicken wings (makes approx. 12)
3 garlic cloves, minced
Half an onion, grated
1 tablespoon chicken seasoning
1 teaspoon smoked paprika
1 teaspoon coarse black pepper
1 teaspoon white pepper
1/2 teaspoon dried thyme
2 cups bbq sauce of your choice
Clean and wash chicken in lemon juice and water
Add all of the seasoning to chicken. Leave to marinate for at least an hour
Add half of your bbq sauce. Then put them straight on the bbq
Cook them on the bbq for 10 mins then baste chicken with a brush with more bbq sauce
Do this again every 5 mins until chicken is cooked, approximately 20 – 25 mins.
BBQ corn on the cob
4 corn on the cob
3 tablespoons butter
3 cloves of garlic
Freshly chopped herbs you can use parsley or chives
Wash corn on the cobs thoroughly
Melt your butter in a bowl in the microwave (approx 15 seconds)
Crush the garlic cloves into the melted butter and stir to combine
Add in your chopped herbs to the butter and garlic and mix well
Cut some sheets of foil big enough to wrap corn on the cobs in separately
Put corn on the cob in the middle of the foil and drizzle over some of the butter mixture
Do this for each of your corn on the cobs
Place on the bbq in the foil for 10 mins
Take corn out of foil, baste with more of the butter mixture and place back on the bbq without the foil
Cook for a further 10 mins whilst rotating corn so it browns evenly
Serve whilst hot!
Peach lemonade
This is a recipe for peach lemonade, perfect as a summer drink it goes down so well at parties and kids love it too! Plus it looks really pretty when served in glasses!
3 cups diced fresh peaches
Zest of 3 lemons
1½ cups sugar
6 cups cold water or sparkling water, divided
1 cup fresh lemon juice (juice of approx 7 lemons)
In a large saucepan over medium heat, add diced peaches, lemon zest, sugar and 2 cups of water
Stir to dissolve sugar and let mixture simmer – do not boil
When peaches are very soft, mash them with a fork
Let mixture simmer until it thickens slightly then remove from heat and let cool
Strain the peach syrup mixture into a bowl and throw away what is left in the sieve
Add the lemon juice to the peach mixture
Pour into a jug along with 4 cups of water or sparkling water
Refrigerate until very cold
Serve in glasses with ice, fresh mint and peach slices
